A sad Sipdown, but we will meet again. I am on a self imposed no order ban until after my Chicago trip, because I intend to get anything I damn well please there.
I just realized that everything I have had today has been from Whispering Pines, not really intentionally so I guess my subconscious is a fan (so is my conscious). Two cups of Golden Orchid early, then a long drooling nap, then this cup.
Graduation went really well last night, even the pre grad dinner with my ex and his evil wife. Afterward my daughter went to Project Graduation and won a laptop! My husband is a saint, so he both took her at 11 pm and picked her up at 4 am. That’s because he is a winner of a stepdad. <3.
I really love this tea. Sadly I am almost out.
Busy week, my youngest is graduating high school Friday.
(I assumed it’s a daughter from something else I remember you saying…but now that I’m thinking back on it, I feel like I’m completely wrong. So either way, congrats to you both, and I hope I’m not completely stupid.)
Confession: this is my first Whispering Pines tea.
Wow. Interestingly, it brewed up very dark, like a black tea.
This tea felt like a hug in the middle of the woods. I could smell the trees, the campfire, and the fresh air. The taste was a bit cinnamon, a bit of wood (but not in a rooibos way), a little berry. Comfort in a cup.
Sipping on this tea on this RAINY early afternoon. Texas is parched y’all – we needed this rain so very much. I’m grateful to be sitting on my porch swing while it rains and drinking this tea.
Yes it is – not as bad as some places in Texas. The lakes that supply us are really low and the flows into them are historically low. But this has been a nice rain event. Can’t make myself go back in the house. I’ve missed real rain.
I steeped two teaspoons of these cute little curlicues in about 15 ounces of boiling water for four minutes. And then…..Hello great big fat HONEYMOUTH! So sweet and thick tasting. There is a roasty grain bit. There is chocolate and there is malt. All pleasure-buttons for me. There is a little floral waft at the end it’s a sweet floral, like sweet peas. And honey, it is silkysmooth. Like Al Green. How is it possible I only ordered one ounce of this?

I placed my second order earlier today and got another ounce of this among other things, oops. I’m way over budget this month, summer will have to be all about sipping and nothing about spending :-(
@whatshesaid – I still have a couple I haven’t tried yet. But so far, I would have to say the Golden Orchid, this one and the Ailaoshan. I’m pretty sure I’m gonna have to suck it up and spend the $ on the Port too.
@TheTeaFairy – I’m so ridiculously far over budget. I was a miserable failure at the Hiatus thread. I need help.
I did it, I ordered the Port actually. Triple oops. I reordered 4oz of Ailaoshan, and could not resist the description of Huang Zhi Xiang Phoenix oolong. Golden orchid was sold out, sigh. I will have to be content with the one ounce I got for now.
Ok. It’s 2:30am.
Do I want more tea? Pfff, of course I do.
I want Bi Luo Chun Yunnan Black. I can have it if I want to. I still have a little bit left and I’m expecting more soon.
Cause ya know…I’m kind of addicted to a certain tea co. that makes delicious tea.

So it all started the day I bought WP BLCYB. I like this type of tea, I have supplies from other brands.
So now, BLC from WP, why should I make YOU my BLC of choice, the one and only, the absolute best I’m now going to keep in stock and make me say farewell to the others?
I’m already addicted to several other little friends of yours. Ailaoshan Black, Golden Orchid, Port, and now Elderwood… You should know that technicaly , I don’t really need you…
…But, but… I WANT you!!! You taste so good, damn it!
I see myself writing the following, and I quote «This is like having candy».
Uh??? But, I don’t like candies all that much…so what does it mean?
It means that this tea is MUCH better than candy…that’s all.

So I needed something comforting tonight…First cup of tea for me today. I need the works, and this one is special enough to make me really happy. Love my Yunnan teas.
Is this not the prettiest tea ever? Fluffy downy little golden spirals, they look like Goldielocks hair…
The brew smells like candy, and taste like barley sugar.
It holds just a hint of malt.
I get some spicy and floral notes. It feels round and silky in the mouth.
It’s a mellow tea but far from being weak, it’s super flavourful.
This tea ranks really high in my collection at the moment. And tonight, it helped me relax and feel more serene.

I have not had this specific Bi Luo Chun black, but I love the golden spirals, they are probably the prettiest tea leaves. But really I am such a sucker for golden fuzzy teas :)

Beautiful sunny day after the rain…nature’s awakening everywhere I look. The trees are getting dressed with their shinning armour of tender green leaves.
I chose this tea to accompany me this morning.
Not all Bi Luo Chun are created equally. This one is crafted with labor and love. Just stunning to look at, precious little bundles of golden Yunnan captured in every single nugget.
The taste does not disappoint either.
Honeysuckle and barley sugar are the main stars.
The infusion smells like candy. It renders a syrupy feel in the mouth.
Chocolaty and slightly malty. I taste just a breeze of spicy and floral notes as a finish .
A little work of art this tea. Another one I can see myself sipping in no time.

Yay! I am so glad I ordered this one as well. Now I am having WP’s Ailaoshan black and I’m trying to make up my mind about it… I don’t think I am ready to write tasting notes about it just yet!

Silky smooth and sumptuous, there is chocolate way up front. Then gooey melty caramely deliciousness. With a very slight malt toward the back and deep roasty fruit at the end. I also get an almost winey updraft into my nose as I swallow.
This is full of win and I will have some as long Brenden supplies this new habit. Near perfect. As usual, more on my blog:

recent order from Whispering Pines. Leaves are gorgeous long twisted mix of pale green, green and dark,almost black.
my first steep i made according to instructions: 1TBSP 190F 8oz 3min
it produced pale yellow green brew. Very nice,complex flavor. Kinda hard to separate into notes. I’ve noticed that i prefer to drink white tea as it cools. more flavors become noticeable. Also i remember that Lee brews her whites like 165F and long steep. So i decided to try my second steep 165F set my timer for7 min, and completely forgot about it. I’d say it was steeping for good 45min. Gorgeous dark golden brew, flavors are delicious. i got some peach, grape, honey, hay, nuts. no trace of bitterness. i love it this way. it kinda reminded me Oriental Beauty. From now on this is how i’m going to treat my whites. Thank you Lee !

Yes I baby white teas. But I do 185 on white peony usually for 3",,,just depends on the tea I have I guess.
Ok Lee, now you have to make a chart for us which temp for which type of white. I’m real dummy when it comes to white tea.

I just got a one ounce sample of this tea in the mail. I may have to brew it tomorrow morning. Did you brew this western style or gongfu?
Allan, I western brew it cause it’s so good I’m too impatient to gongfu it, lol. But I hear it’s also very good that way.
My way is 1 big tbs for 16oz mug at 205F for 4 min. Sometimes I do a second steep for 6 min.
But you should check the new WP website, they now have very detailed parameters for both methods on all teas! I think you should try this way first :-) here’s the link for Ailaoshan

This tea started it all…my addiction to WP. I remember when I read that description, I knew this it was going to me mine!
I just love it. The taste is perfection. It flows like a silk ribbon in my mouth. Sweet salty caramel, cocoa, dried fruit compote, slightly floral…I can’t get enough of it!
It’s an explosion of liquid happiness.
I never want to be without this. Ever.
I know right? And now I’m running low and I’m hopping my order hasn’t shipped yet cause I want to add some!!
I bought 3 oz not too long ago, so I’m sitting pretty for now. I’m sure Brenden can hook you up! He let me change my order from 2oz to 3oz with no problem. It was Monday and I was on the struggle bus hardcore, which he understood.

I’m am totally eating cherries in bed on this lovely Sunday morning, sipping on Aila…
Because they go so well together.
One crunchy cherry, one sip of Aila…oh my.
This is my go to morning tea now. I just know it’s going to be good every time no matter what.
Sweet cup of malt and sea salted caramel, with super fruity notes, mmmmm.
It’s far from being as strong as what I’m used to early in the morning, but it’s just such a charming tea, I can’t resist it.
(I know you guys must be tired of me, but please be patient…cherry season is almost over already… soon, I won’t be able to find decent fresh ones, and you’ll stop hearing about it…I promise).

Salty, sweet liquid caramel with plums dates and figs. This is what this is. It’s a little grainy and boozy as well, I notice now.
I just can’t be without it.
So I ran to the market yesterday to get me some cherries!!! (By now, you might know I kind of have an obsession with them)
So this morning, I am dipping them in Terri’s coconut whipped cream. And I promise you that nothing in the world tastes better than this…except maybe my Ailaoshan Black!!!

Frolic, here’s Terri Harplady’s recipe:
2 cans of regular coconut milk you keep in the fridge for 2 days to hardened it. You scoop out the white part and dispose of the water that you can keep for smoothies or whatever.
You mix the coconut cream with a hand mixer until it becomes the consistence of whipped cream. You can add a little maple syrup or if you want it sweeter. I’ve been also adding lemon and orange zests to mine. It is to die for!!!

I tried my sample this morning and it was just so gorgeous. It made me happy, and I was even drinking it at work! And I STILL felt happy! LOL. Thanks so much to MzPriss for the sample. Obviously, I ordered some.

Oh! Me too then…with almond milk and chia seeds. Mmmm, cherries. Me and my Steepster friend Dexter (not talking about my dog here!!!) are legendary cherry lovers. Happy to have found another cherry nut :-)
Mine has chia seeds as well because <3. I use half organic kefir and half locally made organic yogurt, cherries, chia and some whey protein. It’s cherry-y and tangy and mmmm-y

Yours is a meal!! I don’t “eat” breakfast weekdays but have green smoothies with way too many ingredients to list here, lol. But I’m planning to have oatmeal and apples and berries later so I must keep the smoothie a smoothie!
Mine IS a meal. It’s what I have for breakfast weekday mornings. Tomorrow morning I’m making cornmeal pancakes with peaches and cottage cheese. And probably a little bacon.
I love chia and almond milk smoothies! I use soy yogurt, rolled oats and fruit in mine. I also always add a handful of spinach to get some veggies. Can’t even taste it!!!
I do sometimes put a handful of baby spinach in – you’re right, you can’t taste it. I also do like some oats in on occasion.
I use flax seeds sometimes, too. You guys are making me want cherries. I found some wild cherries when hiking last week, but the trees were too tall for any kind of real harvest. So sad!

Sarsonator, I add oat too most of the time, isn’t it great? I started making green smoothies about 3 years ago. I remember how everything tasted weird at the beginning. I now use a ratio of about 2/3 veggies 1/3 fruits. Kale, spinach, carrot, celery, beets, cucumber, anything goes, and I LOVE how it tastes. The boost of energy that follows is unbeatable.
I love the green juice with kale and spinach and celery and parsley – I can feel my cells just sucking it up and smiling
I make green smoothies, too! I normally do fruits, almond milk, soygurt, oats, chia in the AM, and then veggies/fruits for lunch. I love carrots and apples with spinach and kale!
This morning, I’m having a kid’s breakfast. I’m hungry cause instead of eating dinner last night, I got drunk…Tea drunk that is. With giggles and all the fun that comes with it.
So I’m making “oeuf dans le trou”. (Egg in a hole???) Don’t know if other people have that dish in the world, but I’m guessing yes cause I found this pic:

That’s exactly how I do mine, with a thick whole grain slice of bread and a big omega-3 egg.
When we were kids, It was a fiesta when my mom cooked them…
I dip the little bred circle from the hole in my egg yolk. So much yum, so much fun!
And what best tea to pair with it than by beloved Ailaoshan Black?
The sweet salted caramel notes chase away the eggy aftertaste in my mount, it’s almost like having eggs with maple syrup.
Then on it’s own it’s like having a little dessert. Malt with dark chocolate, sweet dried fruits…
I’ve written it all in previous notes.
This tea hugs me in the morning, and I can only hug back :-)
Yes eggs in a hole! I had so much fun with the tea and giggles last night and there was some dinner skipping here as well. I was HUNGRY and I had avocado toast with a few pecan halves and some pu-er concoction and steeping a cup of this awesome tea right now.
My mom always made egg in a hole for us as kids, to this day no one makes them quite the same! I try to avoid wheat these days but once in awhile I just can’t resist an ‘egg in the hole’ as a treat. My favorite part was always eating the little square of bread fried up in butter beside the egg in a hole!
@whatshesaid – I saw a recipe the other day for an egg in the hole without bread! They used a rings of bell pepper and cooked the egg inside – let me see if I can find it and I will link you. Not the same of course but it sounded good to me
I’m very jealous of your breakfast :-). I only have enough leaf for one more cup of this one so I must hoard it until I place a WP order!
Now that’s what I’m craving for breakfast and there are neither eggs nor bread in the house. (I should go grocery shopping.)
We always called it egg in a basket. I loved it, my kids loved it. I miss it, & yes, there are many gluten free variations that are fun, but of course, never the same…sigh…it’s that little circle of toast!

MzPriss, avocado toast is like a guilty pleasure…without the guilt! I also love toast and coconut butter with crunchy chia seeds on top. Weird but so good! And that pu’erh concoction of yours well…for some strange reason, I can clearly envision what you are having ;-)
Inspired by this post, I made a savory almond flour pancake, topped it with sauteed greens & eggs, & made 3 cute little circle pancakes to represent the circle toast. :)
At my sweet little co-op market, they have the best thing now!! I just freshly ground my own CHOCOLATE ALMOND BUTTER!!! Chunks of almonds and chocky chips so so good!
Oh, I make my own peanut and almond butter. Never thought of adding chocolate to the almonds. Oh, that would turn like a some kind of crunchy Nutella, without the excessive load of sugar!!! Will try it this week for sure, thanks!

I am too. I’m cooking right now – just made some cauliflower rice sald (not rice – just cauliflower buzzed in the cusisinart) and stir frying veggies for some lentil curry
Hey, we do seem to have similar culinary tastes! Love the versatility of cauliflower so much, I make some sick fake mash potatoes with nutritional yeast…I’ve served that to people who actually like it more now than real mashed potatoes!!
OK – the banana deal: I used my cast iron skillet and wee bit of butter and sliced my banana length-wise and did a little stove-top grill of the banana until caramelized and brown in spots. Warmed the chocky-almond butter for 15 seconds and then drizzled over the banana. Yes – you want it.
Caramelized bananas with chocolate syrup are the most simple and decadent dessert on the planet. Just sayin’. <3

You don’t have to add anything to it to make it stay syrupy? Doesn’t it harden on the food – or LOL do you just eat it up before that happens?

But then again, I’m a pots and pans fanatic…If I had a gigantic kitchen, I’d probably own every kitchen gadgets and appliances on the market!
:-) I need to get it…Since I’ve condensed my kitchen I realized I’m sort of missing some vital items. I’ve got two cast iron pans, a stainless steel crockpot, and a tiny skillet. I’m a huge fan of Frieling, too, which helps me trust that it’ll be a good investment :)
@WP: Yep, that’s the kind of pan you’ll have for a long time:-) better pay a little more once than keep buying every two years…
@Lariel, it’s not really a chocolate pan, it’s just very tiny and I like to melt my chocolate in it cause I can do just a little bit at a time :-)

I want fried bananas, drizzled lightly with maple & maybe some coconut milk on top,& toasted coconut flakes.Yeah…I want that.
For dinner I’m having brats (nitrate & other BS free), a cultured dill from last summer, homegrown asparagus & cukes, & sweet potato french fries fries.
Tomorrow I’m planning to make a batch of cauliflower tabouli. I haven’t had tabouli for a long time & cauliflower makes a pretty good sub for bulgur too. I have all the other ingredients in my garden: parsley, mint, cukes, sungold cherry tomatoes, onions, garlic.
Foodie? Damn right!
My dog thinks all cats are puppies, and so he acts like a daddy dog and goes to snuggle them and keep them warm, but they just smack him in the face and he gets confused…lol
It’s ok…the intention counts, I’ll always remember you offered to share with me:-) enjoy for the both of us!!
Terri, if I was living near you, I’d find an excuse every day to drop by around dinner time, and just pretend I need something. And then you would say, «hey fairy, I was just about to have the most fabulous dinner and dessert, would you like to join? » ;-)

I love those pics! I used to have a great dane (Ellie Mae), & when my cat Opal had a litter of 5 kittens, they were HER kittens. She mothered them all the time, they were her babies.

You guys have spiked your tea, I’m positive. Have you seen Brendens kombucha (or kumbaya whatever)…It’s fermenting into hippie wine (b4 you were born). (Sorry Brenden, it looks like fruity sangria with soggy granola on top. Most of them do not just yours). Need a party somewhere. A cruise! (Keep saying that)

Lol, we do sound like weirdos don’t we? Lariel, kombucha is fermented tea. It looks gross and slimy but it tastes pretty good and has a lot of health virtues. Brenden had a link on how to make your own on WP website but I can’t find it anymore…
I know what kombucha is, I’ve had it a few times. I was wondering what ‘cukes’ are slang for. That’s not really a word we use in California.

I grow a lot of them, then I put them into a salt brine for 2 – 4 weeks to make old fashion dill pickles wth lots of garlic & dill.

hell yeah! We’re still eating them from last summer, & I’ve started making the new ones, so there will always be more! Along with home made cultured (and very much alive!) sauerkraut, kimchi, dilly beans, & whatever else I add to my bubbling laboratory :)
