Made a really nice chai with ginger, cinnamon, and a bit of cayenne. Inspired by a disappointing spicy hot chocolate purchased the previous day.

I think I like simpler chais, with only 2 to 3 ingredients, rather than the laundry list of indian spices. I need to remember that; I have a hard time resisting adding just one more spice most of the time.

I have a lot to learn about tea. So far, I know that I love drinking it. Black tea with milk to wake me up in the morning, endless cups of green tea at Chinese restaurants with friends in the evening, spiced tea with sugar for an indulgence, herbal tea with honey to calm me down…TEA!

likes: vanilla, cinnamon, spices

less-liked: fruity teas, artificial additives (although I might be okay if I don’t know about them? I don’t know yet).

I’d like to blend my own tea someday, with essential oils and good quality plain tea and the like. The idea of my own earl grey or monk’s blend is really enticing.
