A great, no-nonsense breakfast tea to get the day started. I steep with water that has had a little time to cool down from the boil – say, one to two minutes with the lid off the kettle and then steep for four minutes. The bitterness is eliminated and the strong, round flavor remains. A splash of milk to bring out the best.

My “after-breakfast” tea that will carry me through until the afternoon. Water was a little hotter than normal (just off the boil as opposed to a two-minute cool-down), so it’s a little more robust. Just a dot or two of milk in the cup helps soften the sharp edges.

Resteep with freshly boiled water, no cool down. Still excellent.

Prepared with water cooled off the boil for about a minute and a half. Good strength without being bitter.
