An excellent chai. Perfect with sugar and a little bit of milk. Not as strong as Adagio’s Masala Chai (one of my favorites) but the coconut and lemon flavors make this stand out beautifully. A new favorite I’ll want to keep around.

I’m all out of my Fujian Baroque so I turned to this number instead. I do like it, but it just has none of the cocoa and an added smokiness that isn’t always to my liking. It makes a nice morning tea and it’ll have to do before this next round of shopping.

When I was at the Field Museum of Natural History, I saw a diorama of a tea plantation in Sri Lanka.

That sounds really intereating. Are you referring to the Field Museum in Chicago?

DId you happen to know of any good tea places there? We’re heading to Chicago in two weeks and I’m trying to figure out where the best places to go for tea are.

I decided to finish off my last little bit of Thai Chai in style – by making it traditional-style like I’ve been saying I will for months.

I used this recipe on the website www.chai-wallah.com

In a pot bring to the boil 1 cup milk and one cup water.
Add 2 tsp of the chai/tea mix to the boiling liquid.
Add 2 1/2 to 3 tsp of sugar or sweetener of choice.
Simmer for two minutes and strain through a fine tea strainer.

I used skim milk so technically it isn’t old-school chai – but then lemongrass and coconut aren’t your standard chai ingredients anyway. I used wildflower honey as a sweetener.

It’s a little bit messy and more time-consuming than just brewing it in a cup with hot water but the results were worth it. It tasted like I’d added pure coconut milk to the tea – it was just sweet enough and the coconut flavour in particular was really prominent. It was smooth and creamy-tasting without the slightest hint of astringency. I’m so going to have to try other chais this way.

…Is it bad that I’m still tempted to drink it because I love this tea so much and even bad milk can’t spoil the taste completely? ;)

My internet was borked and I only got it back now, so this is from early this morning.

I hadn’t had this tea in awhile and decided to remedy that tragic oversight. This is still the best chai I have ever drank. I’m definitely ordering a refill for this puppy when it runs out. :)

Resteeping the leaves from earlier. The tea is too thin for milk, but it’s fine without it in my opinion. I think more of the lemongrass flavour comes out now as opposed to the first steep.

It’s actually been awhile since I last drank this tea – too long. It was a big hit with my friends when I had them over for supper night before last, but I wanted to be all: “Nooo stopping consuming all of my favorite tea, I don’t have much left!” DX

Of course you can’t say those things. Instead you have to say things like, “Oh please do have more, I am so glad you like it” and things like that when you really want to say, “Take your hands off the tea and no one gets hurt.” ;)

ZOMG this stuff is awesome! The spices were less intense or bitter than with the traditional chai and the coconut flavour was well developped, the hint of citrus from the lemongrass making it stand out even more. This is on its way to becoming my new favorite tea.
