OK so every time I have this, I get loads of hay. Maybe sweet, but mostly hay. Not like the dark, creamy hay of a pu erh, though: it’s lighter in body but definitely hay. Maybe I should experiment with brewing times to bring forward the fruitcake and chocolate?
