Tea is made by roasting green tea leaves on a hot traditional stone called ‘Ketsi’.
The roasting process gives the tea a dark color and intense flavor that is different from traditional green tea. The taste may resemble Japanese Hōjicha. The main difference is a slightly different roasting method and the fact that Japanese roasted tea consists mainly of tea bush stems and Georgian roasted tea consists of high-quality leaves. Georgian roasted tea is often served in special ceramic dishes that keep the tea warm for a longer time. One of the most important parts of the tea ceremony in Georgia.
