Characteristics: Longjing green tea is the favourite green tea in all of China, with its most prized offerings reserved only for government officials. The harvest starts in the first week of April, and lasts only several weeks. Only the young bud and first two leaves are picked and quickly tossed in a wok for 20 minutes.
Tasting Notes: The flat leaf is a yellow green colour and resembles the tea leaf as it exists on the tea tree. When infused, the characteristics of the leaf are revealed, along with bright golden liquor. A burnt vanilla background, representing a complex yet balanced bouquet, supports a fresh herbaceous and mineral centre.
Steeping Directions: Infuse in a Gaiwan for 4 minutes at 75C.
