Aracha, or unrefined leaves, is the state of tea when the farmer finishes processing. Most farmers then sell it to wholesalers/finishing factories for refinement which can mean removing stems and dust, sorting out leaf shape, cutting leaf to a certain size, further heating to impart sweetness, etc.
This particular Aracha Unshaded Summer Harvest comes from our farm partners in Kyoto, and was grown unshaded for a strong, full-bodied astringency.
