Bancha is usually summer or autumn harvested tea leaves that have been allowed to grow larger and thus stiffer with more astringent tasting catechin. It is not usually harvested in the spring because farmers want to harvest the leaves young as they fetch a higher price. However, spring-harvested bancha, while rare, is rich in its full-bodied astringency and is perfect for those who want a catechin-heavy green tea from Japan.
