The first Da Tian harvest is special because the very cool weather that requires greenhouse protection for the delicate tea plants over the early spring leads to slow growth and rich sweet, textural intensity. When this greenhouse protection is removed, the plants get their first taste of sunlight, and combine the textural intensity and sweetness of shade-grown tea with the aroma and aftertaste that early sunlight brings out. Mr. He produces Pine Needle Green by hand, combining the twisting and curling techniques of bilochun with the flat pressing motions of Dragonwell-style. This allows him to lock in the deep rich complexity and sweetness that curling brings while still presenting a beautiful tea that dances in the glass and opens up in just the right way for potent aromatics. Only a few kilos of this special tea were produced this year, and the He Family was kind enough to make them available for the first time.
