Handmade teas are highly valued in Japan. This year we had the opportunity to taste several beautiful teas from our long-standing supplier, who dared this year and made shielded teas from cultivars, which he uses mainly for sencha teas. The Tsuyuhikari cultivar is a staple in our menu and one of the most popular teas that Mr. Katahira really knows. This is no different in this case, when the intense aroma of Tsuyuhikari is beautifully incorporated into a sweet, noble harmonious, umami taste.
