A tea with many fables; Ti Kuan Yin can be translated to Iron Goddess of Mercy. It is said that the goddess Guanyin (Kuan Yin), appeared one night in a farmers dream and told him of a secret cave that he should visit to find a gift of thanks for his worship. The farmer awoke and travelled to the cave where he found a single tea shoot. He took the shoot home, planted it and watched it grow into a tea bush. He shared the tea with all his friends, naming it after the goddess herself: Ti Kuan Yin. This oolong is a treasured, premium tea in China, and has an elegant, nutty taste with sweet peachy notes and a light astringency.
