From Sazen

Tea from Kōka city, a city on the south-eastern part of Shiga prefecture, neighbouring Kyoto prefecture.
100% from Yabukita, Japan’s most well-known tea variant.

After the Yabukita tealeaves were picked on the 22nd of April, they were only steamed for 20 seconds, then dried at 80 C for 30 minutes to bring out the freshness of the shincha to the fullest.

Taste: Sweetness and astringency spreads through one’s mouth and it has a fresh aftertaste.
Color of tea infusion is “Yamabukiiro”, a bright, golden-yellow color.

Limited edition, available until the end of June or until stocks hold.
Harvested: 22, April 2021
Tea variant: Yabukita

Polished off the last of this a few days ago and I’m really going to miss this one. It came as a sample with my Sazen order. This is a lightly steamed sencha that has a clean and fresh flavor.

Forest green needle shaped leaves brew up a clear light green liquor without any cloudiness. Smooth, buttery, and rich in umami . There’s a lima bean creaminess which coats the mouth and leaves a lingering umami aftertaste.

Resteeps are more or less the same. Lima bean / cashew creaminess and lots of umami.

Flavors: Cashew, Grass, Lima Beans, Umami
