Description

Shincha means new tea and refers to the very first picking of the 1st Flush harvest in spring. This Shincha is from one of Mr. Nishi-san’s Yabukita gardens on Kirishima Mountain. It was hand-picked on April 20 at about 700 meters above sea level. Less than 2% of Japanese tea is hand picked, so this select batch is very precious. The Yabukita tea bush is the most cherished varietal; about 70% of Japanese tea is harvested from Yabukita. This Shincha has the classic character that Yabukita lovers favor with a balance of rich umami and fresh sharpness and bittersweet, refreshing accents. This tea is one of the best we’ve tasted so far in 2010.

Water: 165°F / Leaves: 1 tablespoon or 6-7 grams per 8 ounces / Infusion Time: 1 minute / For a smoother, more umami flavor, use 155°F water. / Ingredients: Green tea. / Origin: Kagoshima Prefecture, Japan.
