This particular tea, the Sayama Kaori (狭山香り) varietal, though a more modern varietal, is renowned for its very traditional Japanese flavor and aesthetic. This varietal was cultivated originally in the Saitama region of Japan, but soon found its way to the Kyoto tea fields. It produces a rich green liquor full of umami, sweetness and a hint of bitter. No, just a hint. It also provides a flavor which, while being indescribably evergreen, reminds those who know of the taste of a truly handmade Gyokuro. This and Meiryoku are my personal favorites for their deep, evergreen flavor highlights.
