Sencha is the most common and popular variety of green tea in Japan. The fresh leaves are steamed immediately after harvest without any withering. This preserves the tea’s fresh, vivacious green quality and bright, chlorophyll rich color. Since it is not shade grown, Sencha has a bright green-gold color and is not as sweet as Gyokuro. The flavor is also more assertive (usually described as brisk, or astringent), with a bright, grassy aroma
