The fresh purity of this special green tea from Zhejiang can already be grasped by its translucent liquor, which shines of bright hues when touched by the warm rays of spring sunshine.
With the first morning light, expert artisans pick the delicate tea leaves, carefully and always by hand. When picked, the buds are so pure that they seem white in color, hence the name “White Tea from Anji”. They are then hand-rolled to give them a peculiar needle-shape, and after shaqing – the killing-green procedure that blocks oxidation – they preserve their natural emerald nuances.
Each leaf of Anjibaicha contains 6.5% of amino-acids, about four times more than the average of other green teas: this is the reason for its softness, for its captivating umami flavour that suits so well a bright summertime morning.
