From Anxi, Hairy Crab, or Mao Xie, is one of the representative Oolong teas. The leaves are covered with fine white down, which explains part of its name. The fragrance of the leaves is hard to put your finger on, but it’s slightly reminiscent of a fusion of jasmine and orchids. The infusion is a golden yellow color, very fragrant and smooth with a lingering aftertaste. This is a tea you can enjoy all day, every day.
Brewing: 1 tsp, 212 deg, 2 min, 5 infusions.
Brewing vessel: gaiwan, Yixing clay teapot. Gongfu or Kungfu brewing method strongly preferred.
Storage: Keep Hairy Crab cool and dry away from direct sun light and other spices
