From Dear Camellia

Using Assam-based black tea that is crushed, torn and curled into small, refined pellets. known for its body, briskness, malty flavour, and bright colour, Assam-region tea is often regarded as a morning drink. Grown near sea-level, it prefers more tropical areas, lending a malty tint to the final product. This is then paired with some local favourite spices including black pepper, cloves & Cinnamon.

TASTE:

Stronger and bolder than others, the Assam black tea gives a brisk body to this chai. Paired with the uplifting character from the various spices that make this into an experience with a beginning, middle and end.

INGREDIENTS:

Assam CTC tea, Cardamom, Cinnamon, Ginger, Cloves and Black pepper

PREPARATION:

Chai can be prepared either in a strainer, teabag or more commonly in a saucepan. Use about 4g per 200ml of water and place water and chai into the saucepan and heat until simmering, taking care not to heat too quickly as this can affect the taste. Once simmering, strain into a cup and add honey, sugar or milk to your preference and enjoy.
