Excellent gyokuro. There are lots of “correct” ways to brew this tea, but it really depends on what you like. Brewing it with 100-120 degree water for 50-60 seconds is recommended. This results in ultra smooth texture and flavors of spinach and damp grass. Alternately brewing it in 130-140 degree water for 25 seconds gives it a lighter texture, similar to a sencha.
