The leaves are carefully plucked bud sets that are traditionally worked in a wok to a pan-fire style. The result is uniformly shaped, elegant jade-green leaves that have an understated yet distinct straw-yellow coloration. We think it is best steeped briefly, one to 1.5 minutes, to enjoy the subtle qualities of the leaf.
