Oh My Tea! This tea – this tea is so good!

When I ordered this Yunnan Golden Needles, I wasn’t sure what I was going to do with it. To be honest, I just loved the way the leaves looked. So pretty!

When I received the tea, I taste tested it & determined what ever flavor I decided to go with – it needed to have a caramel-y component to it because the unflavored leaf has a strong caramel note to it (but it should not be confused with the Wild Arbor Assamica from Yunnan – which also does have a caramel-y note to it, but this Golden Needle Yunnan has a distinct Yunnan quality to it – it has the smoothness of a Yunnan.)

For the blend that would include these beautiful Yunnan Golden Needles, I decided to go with a flavor profile I’ve been imagining for a tea for some time: Alfajores! Hints of buttery shortbread with a hint of brandy, lots of dulce de leche & coconut. This is sweet, smooth & delicious.

When you brew this tea, keep in mind that you need to wait to allow it to cool for just a bit. I know it’s gonna be hard to do – it’s hard for me to do too – but the flavors will come into focus with some time to cool slightly. Just wait about 10 minutes, the tea will still be nice & hot, but not quite as right-out-of-the-teapot hot. Trust me, your patience will be rewarded with an amazing flavor that is not only delicious, it’s also vegan, gluten-free, allergen-free & all natural!

ingredients: black tea, organic coconut, organic calendula & organic natural flavors

to brew: use 3g of leaf to 12oz of nearly boiling water (205°) & steep for 3 minutes. strain & allow to cool for at least 10 minutes. Enjoy!

As I mentioned previously, a little bit of cool time (10 minutes) will bring the flavors into focus. A wee bit of sugar will also enhance the dulce de leche & shortbread cookie notes just a bit.
