Tea of the Week for August 5, 2019!
Weird name, right? I mean, you can really turn any green tea into an iced tea – so what makes this one so special – or rather – so much more “iced tea” than any other green tea? Well, I don’t know that it’s necessarily “more” iced tea, but this tea was crafted specifically as an iced tea blend. I added flavors to it that I thought would help it to shine as an iced tea.
First, I started with a sweet tasting Chinese Sencha – it’s light, it’s refreshing, it makes for a pleasant iced tea base. Then I added spearmint leaves for a crisp, fresh flavor. Then I added some peaches to give it a delicious juicy sweetness. I added a few dried lemon wedges to add a touch of brightness to the cup. Finally, I added a bit of honey essence to boost the sweetness just a bit. Together, these profiles create a light, refreshing, flavorful iced tea.
I prefer to cold-brew this, if for no other reason than the simplicity of it. I have a quart size jar with a large cold-brew filter (that is as long as the jar – so there’s plenty of room for those leaves to expand!) and it’s perfect for cold-brewing. I use about 7.5 grams of tea for a quart of iced tea, fill the jar with cold, freshly filtered water and stash it in the refrigerator and let it chill for 6 – 8 hours (or overnight – which is my favorite way to do it, you can set it up before you go to bed, sleep, and when you wake up, you have iced tea all ready for you!) But, this tea is so forgiving that you can forget about it and leave it steeping for nearly 24 hours (actually, about 22 hours) and it still tastes great. (Care to guess how I know?)
This is a winner – and since we can probably expect at least a couple more weeks of hot weather – perhaps the time is right for this tea! And, of course, it’s organic, VEGAN, gluten-free & allergen free!
