Tea of the Week for February 27, 2023!
Every year about this time of year, you can expect me to craft a tea that I will create for my mom – because her birthday is March 7. (Happy Birthday, Mom!) My mom likes my teas & I like to create a tea for her as my special birthday present for her.
This year, it’s this tea! I started with a blend of black teas (Assam, Yunnan & Ceylon), added spices (allspice, ginger, cinnamon, clove & nutmeg) & citrus (blood orange plus a little bit of orange, lemon & lime) plus a touch of cake-like essence to create a super yummy cuppa that I’m certain my mom will love!

more about this tea: as I mentioned above, I crafted this tea with my mom in mind. She really seems to like my spice teas best, so I decided to go with that & also include some citrus fruit. I really like how this one turned out.
It’s sweet without being cloying & it has just enough spice to keep things interesting. It’s not what I would call a spicy tea, more of a gentle spice like you would find in a spice cake that is maybe a bit more cake than it is spice. The citrus is mild – it isn’t in your face, but it is there & it definitely livens things up with a touch of citrus-y brightness. Overall, a lovely dessert-y tea.
to brew: shake the pouch! I know I say that a lot, but I really mean it when I say it! The spices in this blend will definitely want to settle toward the bottom of the pouch & you’ll want some of those spices in your measurement. Use 3g of tea to 12oz of nearly boiling water (205°F) & allow to steep for 3 minutes. Strain & allow to cool for at least 10 minutes. (I found that with this tea, the flavors really began to pop as the tea reached a cooler temperature – like – warmer than room temperature, but not hot.)
serving suggestion: as I just alluded to above – this is really best when it’s served warm – but not too hot. I like it when it hits a warmer than room temperature temp – that’s when the flavors really come to life. I also like this better when there’s a little bit of sugar as the flavors seem to become a little more defined with the sweetener. Not too much, a little less than ½ a teaspoon does it for me. If you want a real treat, use brown sugar or honey to sweeten it.
