Tea themed cakes...
If you were going to make one, what flavours would you use? I need to create a pretend cake business for a baking class project, and was looking for ideas.
Update- This would be for wedding cakes.

A Matcha cake would be amazing. Kinda like a matcha tea latte.
OR! Chocolate cake with Matcha frosting!!
Grind up some chai and have a white chai cake
I’m thinking a smokey tea used instead of water in the batter to make a smokey dark chocolate cake perhaps with some cinnamon. Maybe plain with vanilla frosting and candied hot peppers on top.
I’d use a wedding tea like Harneys to infuse the cake with. I’m taking a cake class and the girl next to me suggested a tea flavored cake….I just about hugged her! Lol
I have made a Pogo-infused rice pudding. I had brewed up a big Bodum of Tazo Pogo, and did not really feeling like drinking it, as it was darker than I was expecting. I decided to use it as the liquid for a rice pudding baked in the oven. It was delicious. The Pogo blend contains pu-erh and cocoa and roasted mate, etc. I also used a can of coconut milk for the dessert.
I told a friend of mine about the recipe. She decided to try the same idea using chai and reported that it was delicious, too!
I don’t know if this qualifies but I’ve recently made a few simple syrups of varying favors to add to frostings and so on. One syrup I’m currently making is tea (earl grey. Brothers favorite) infused, as in I used brewed tea instead of straight water with the sugar. I’m also considering steeping a loose leaf tea in syrup during the last few minutes on low simmer to prevent any bitterness. I intend to soak the cake layers in the syrup (brush it generously over the tops as they cool) so the tea flavor is more prominant.
I’ve been dying to make a earl grey (family loves earl grey) or some other tea infused marscapone/stabilized whipped/cream cheese frosting for a naked cake
A Thai tea cake with vanilla frosting, Russian caravan chocolate cake with maple frosting, something with roasted mate in place of coffee. Not sure about the last one. Seems interesting though

Thai black tea cake with orange vanilla frosting

It’s for wedding cakes, so I don’t think smokey teas would work. Thought about perhaps vanilla spice cake or icing, and matcha.
For a wedding cake, I might try Lupicia’s champagne rose. It wouldn’t be the strongest flavor, but it would go nicely with a wedding theme.
I also think the lemon chiffon from Della Terra would have a wonderful flavor in a cake.
