Cooking with tea (& NPR article)

There have been a few threads on here lately about what foods/desserts to have with tea, so I thought I would share this article on cooking with teas:

The first part mostly just acknowledges that chefs using teas to flavor food is a growing trend (seems like a lot of Earl Grey and Matcha). But there are some cooking tips and interesting tea and cookie pairings at the bottom, as well as a few recipes.

Thoughts? Can you think of any other good pairings? Do you cook with teas or have you had anything really great that was flavored with tea?
