Finding my pu 'plain'

So, I’ve nearly 5kg of pu erh stored at home, in cardboard boxes under my bed. I taste all the tea that comes home and then leave it to age or rotate it.

The thing is, that i’m finding most of my tea ‘plain’, I mean, I can’t find those chocolate, plums, apricot flavours, I just find that earthy flavour or green/spicy flavour.

Is that part of the curve or I’m ruinin gmy pu with my storage?

The temperature of the boxes varies from 16ºC to 30ºC and 50-70% humidity. (spanish mediterranean).
