How do you brew first flush tea anyway? Im still trying to get the brewing just right on that.

I have been brewing the first flush western style but 190 degrees and get good results. Have not tried to gongfu it.

Warm the teapot with hot water

Discard the water

Add 3.5g of tea per 200ml (a little more for First Flush, a little less for Second Flush). Volume is inaccurate because the size of the tea leaf will influence how much tea you can get in a tsp. Weighing tea each time for brewing can get tedious rather quickly. So weigh the first time, take note of the volume, and eyeball it for subsequent brews.

Add hot water (95C)

Steep for 3 minutes

Strain out the leaves and serve in cups/mugs/glasses.

I use the above as a benchmark and start adjusting from there. More tea and/or longer steeps if the taste is too weak. Less tea, shorter steeps, lower water temperature if the tea is too strong or bitter.

Since it is your tea, make it the way you like it. Add milk and/or sugar if you prefer. I tend not to add any milk and just a small bit of sugar, ¼ teaspoon per 360ml of Darjeeling tea.

Depending if you are western brewing or gong-fu’in. Brew it like you would correlate it to other teas. First flush 175-195, 2nd flush @195, summer @195. Nothing is set in stone so test out different stuff but that is how I like to do it.

I’m interested. I have 8 FF2016 Darjeelings and 1 2017 Darjeeling coming in on Monday from my favorite retailer. Is there any chance of getting 50g FF Darjeeling packs do I can try several brews and nail down the best parameters for your teas? I believe your samplers only offer 10g per tea.
