hi, i am beginner from indonesia. i do love tea so much but i dont have any knowledge about tea. can anyone help me what is the 1st thing to do to understand the tea?thank you so much
I would start by saying that you have to use good quality water if you want good tea. Tap water is usually no good, your tea won’t taste right. Use spring water or filtered water from a good filter. If you are going to use filtered water it has to be one that really filters out everything impure in your water. After that I would say you have to buy good quality tea. Frequently the tea available in supermarkets is low quality tea bags. If you start with good water and good tea you are on the right track. Then your teaware that you have will dictate how you brew. If you buy a gaiwan you will want to brew gongfu style. If you buy a 500ml teapot you will be brewing western style. For gongfu you want to start with short steeps of 5 or 10 seconds, for western brewing you probably start with a brewing time of around 3 minutes.
City tap water is pretty good here. You have to be careful with Spring water if it has too many minerals that can interfere with taste. Some brands of spring water don’t seem to change the taste and are good. Country tap water definitely has to be filtered. I say this because brewing high grade green teas like Gyokuro makes it very noticeable.

We don’t really have local tea in the US yet. There are several farms working on it in different areas, but hardly any have enough to sell yet – the plants aren’t old enough is my understanding. There is the Charleston Tea Plantation in South Carolina, but I don’t care much for their tea. I tend to drink a lot of Chinese blacks from Yunnan, Assams from India and blacks from Taiwan.
