White Peony, also known as Pai Mu Tan(白牡丹), is a sweet, mild tea made from plucks each with one leaf shoot and two immediate young leaves. The freshly harvested leaf is allowed to wither dry in the sun. The natural oxidation which takes place during this withering gives White Peony beautiful, plush flavors.
The aroma is fresh, mellow, floral with a note of cut hay and a malt undertone. Infused properly, it is an easy tasting tea that is fresh, slightly sweet, with medium body and yet light enough for all-day consumption.
