This tea is like wine in that gets better with age. It initially starts out as a Green tea but is not fully fired. Instead, the moist leaves are loosely stacked on top of each other to allow for drying and aging. The result is a color change from green to a deep burgundy. Pu-erh is also highly regarded all over China due to its health benefits compared to other teas.
