This exquisite white tea from the Fujian Province in China was a luxury served at the court of emperors. It is made from the silvery buds and first two leaves of each bush, harvested in early spring when the leaves are most tender. This tea is dried in the sun as soon as it is picked, to capture its fresh sweetness. It should be brewed very lightly to make a pale green tea with a mild sweetness and complex honey aroma often compared to muscatel wines.
