When many Fujian Chinese moved to Taiwan with Chiang Kai Shek at the time of the Revolution, they had an immediate affinity with the Taiwanese who had been making Fujian-style Oolongs for centuries. In the ensuing years, Da Yu Ling and other Fujian ball-rolled style Oolong teas have been perfected both in the traditional growing regions for this style and now other places on Taiwan as well. Authentic Da Yu Ling Oolong tea is made only in the high mountain region of Li Shan. It is one of the several most-highly-regarded Oolong teas, demanding a premium price and high demand worldwide.
Oolong teas are brewed numerous times. Water should be cooler than that for Black tea, and hotter than that for Green tea. It is not unusual to steep a fine Oolong tea 5-8 times. Each steeping will offer a different flavor profile.
Steep 2-5 infusions at 30-90 seconds each
or 1-3 infusions at 2-3 minutes each.
Water temperature should be 180° – 190° F
