Gui Fei is an unique oolong that can only be produced by the collaboration of human and insect. After the spring harvest finished, farmers allows jassids or leafhoppers to attack their tea plantation. When jassids bite the young leaves, the tea plant has to raise its defence by producing some special chemical compounds in order to heal the wounds and prevent further attacks. And that kind of chemical alteration adds more honey and fruity flavour into the tea leaves.
