Description

Organic Balhyo Black Tea 발효차대.

Using semi wild tea trees grown on the Jiri mountains in a bamboo grove and processed by an organic certified farm (JAS, USDA, EU) that has been naturally cultivating traditional Korean organic teas for decades.

This tea is unique to Korea since it can’t be specifically classified as oolong, black, or puerh. I’ve categorized it as black by level of oxidation and taste. Young green tea plant (camellia sinensis) is oxidized and fermented and allowed to hand dry during the day and then rehydrated with the morning dew. This process is repeated many times until the desired aroma and taste is achieved. By doing this the tannins have been “washed off” so it produces a much less bitter black tea (compared to camellia assamica in Indian black teas) with less acidity.

Hadong, Korea

Flavor Profile:
The strong aroma is of roasted almonds and cocoa. The taste is delicate yet pronounced with a full range from beginning to a very long finish. It is hard to describe the satisfaction of drinking this tea so I will leave it up to you to discover and enjoy.
