This is a Spring 2012 Phoenix Bird Dan Cong from northern Guangdong province. It is grown in singular tea trees and is picked using tall ladders.
It has an obvious stonefruit, in particular apricot, flavour and aroma, combined with a balanced minerality and continuous mouthfeel.
Origin: Chao An, Guandong Province, China (Spring 2012)
Preparation advice:
Quantity: 4g per 200 ml water (a generous tsp per cup)
Steeping time: 2 – 2.5 mins (don’t be tempted to brew too long)
Water temperature: 90°C
