From Taiwan Tea Crafts

This is the first time that we introduce a tea that does not get attributed our usual Lot number indicating that it meets all the standards that has made our reputation through the years. One of the criteria that we’ve abided by was to not sell any tea that was flavored in any way using concentrated essences or distillates. This is the first time that we bend the rules slightly. Full disclosure: this “hors-série” and a hint of bergamot essence added to it. We must stress the word “hint”. We’re very far from a typical run-of-the-mill Earl Grey here. We source local organic bergamot fruit from one of our neighbour’s relative (see picture) that we cut, grate and dry ourselves in our workshop. The fruit pieces are then added to a select lot of organic Jin Xuan Oolong Tea that was lightly baked to bring out its creamy sweetness. A very light sprinkling of EU compliant essence is used to support the heady citrus freshness the natural bergamot fruit pieces confer to the tea. The whole process is quite fastidious making this tea one of the most labour intensive ones we make! In the end, all flavour elements are balanced leaving room for the particular tea cultivar to express itself as well as the uniqueness of our local Bergamot varietal. We hope you give it a try and voice your thoughts. We leave it up to you to decide whether it should become a bonafide Taiwan Tea Crafts in-line offering or not.

An interesting experimental batch from TTC. This is a scented tea made using local Taiwanese Bergamot instead of the familiar Italian variety found in Earl Grey tea. Tasting it, however, I can say there’s a world of difference between the two. Real bergamot has a distinct perfumey flavor. Even though it’s a citrus fruit, bergamot flavored tea isn’t very citrusy. This on the other hand is more citrus forward and would not be mistaken for bergamot. Smells and tastes like juicy tangerine and citrus rind. Occasionally, it gives impressions of lemon scented kitchen cleaner and Hi-C. When ambient brewed, the bergamot mingles with the underlying Jin Xuan to produce delicious rose and gardenia florals.

I think this would appeal to people seeking a citrusy or orange scented tea but doubt it will win over too many Earl Grey afficionados.

@Evol Ving Ness it means steeping at room temperature for a few hours then adding ice. It’s my short cut method for cold brewing.

Cool. I ambient Brew for only a few hours though. Any bitterness from steeping that long?

No, but I am cautious about the teas I steep this way. I go light on leaf with those that are prone to bitterness.
