A beauty of a tea. For this tea, only the bud and the top two leaves of the tea plant are hand-picked. Pai Mu Tan means “white peony”. It enchants with a pleasantly floral, but also discreetly tart note. Its well- balanced flavour goes well with light summer salads and oriental dishes with legumes. Hummus and lentil soup also benefit from its taste as an accompanying beverage. Truly the finest tea enjoyment!

Brew in hot but not boiling water for 3-5 minutes at most.

SONNENTOR ADVENT DAY 9

I saw that today’s tea is the first TEA rather than herbal blend, so I decided to have it early as I was feeling sleepy this afternoon.

I steeped it at 185F for three minutes and it is a rich, deep, golden color. The taste is pretty much what I would expect – hay and a tiny hint of sweetness from the floral notes. It was a decent bagged white tea and certainly produced a stronger cup than expected. It perked me up to stay awake for the afternoon, but now I am sitting in front of the Buck Stove and feeling mighty dozy….

Somewhere I read or heard that: “White Peony is liked by anyone, nobody hates it.”
I think it can be really true, because honestly it is so fine, smooth and enjoyable, even though it is milled quite fine for the bags. But it doesn’t turn bitter. It was strong on hay flavours, meadow flowers and overall enjoyable cup of tea, quite mouth-coating as well. Of course, loose leaf would be better, but considering a bagged form, 80 is adequate rating for it.
