Ginseng Oolong Tea from Doi Mae Salong, Northern Thailand, is a specially processed mixture of a fine Northern Thai Oolong tea (medium degree of fermentation) with Ginseng roots. In this process, originating in the ages-old Chinese tradition and knowledge of tea processing, the two ingredients combine to small green granules that slowly open up to leaves, when hot water (near-boiling) is poured upon them, releasing the flavor and active agents of both plants into the resulting tea beverage. Ginseng Oolong tea incorproates all the health benefits of green/Oolong tea and the ginseng root. The granules have a comparably stable consistence, requiring a rather long infusion time of at least 3 and up to 5 minutes. Alternatively, it can be prepared to the Chinese tradition, disposing a first infusion after 1/2 to 1 minute (giving the granule time to open up), with a second infusion of 2 – 4 minutes according to personal preferences. While the tea itself would be good for 2 – 3 infusions, a lot of the the Ginseng aroma is lost after the first one.
