LIMITED RELEASE

BURNT CAKES is the third release of this special series; an oolong tea from the Wuyi mountains aged in China for over two decades before moving to Canada to spend another 7 years in storage, the last two of which were in bamboo tubes. This experiment is again part of our ongoing effort to make 2021 the ultimate fun year.

Produced in the heavily roasted fashion of Da Hong Pao style, this tea had plenty of time to mellow over the years. The aggressive charred wood aromas that were very dominant when we first tasted it now share the spotlight with sweeter notes of caramelized sugar and dark chocolate. A fresh kick in the aftertaste, courtesy of its bamboo finish, makes the desert-like sweetness linger for a long time after each sip. The later steepings also reveal a strong mineral backbone, a trademark of good Wuyi Rock Teas.

We thought aging a 1994 Da Hong Pao in bamboo tubes was a little ambitious at first. We had no reference for Wuyi Rock Teas aged in this way and could only guess whether the tea would benefit from it or not. Truth is, this tea was accidentally mixed with a little bit of aged Taiwanese oolong when brought into storage. So we thought, hell, why not try it. In the end, the results turned out fantastic and we’re only sad we didn’t age more.

Gongfu Sipdown (1421)!

I was on a really good sipdown streak yesterday so I’m continued it with this gongfu session. I don’t gravitate strongly towards bamboo aged & scented teas since they’re very hit or miss for me, but this piqued my interest – I don’t believe I’ve ever crossed paths with a bamboo aged yancha before. It’s pretty pleasant with a smooth and very silky mouthfeel. The bamboo actually comes through surprisingly strongly, and it compliments the notes of roasted barley, woody soft cinnamon, and minerality quite well! I don’t think this is something I would reach for often, but my expectations were definitely exceeded with this session & it’s a pretty relaxing end to the work day!

I steeped out the session, which was something impressive like nine steeps – most of them tinged with that creamy soft vegetal bamboo flavor.
