High atop Drum Mountain, the historic Buddhist monastery has cultivated tea for centuries. Also known as cloud mist tea, these sweet tea leaves are swaddled in a blanket of clouds and mist, which provide the moisture that the tea plants need. This sea of clouds also blocks the sunlight, which causes the tea to mature very slowly, infusing it with a gentle sweetness that results from the slower growth and greater absorption of nutrients from the mountain soil.
Drinking loose leaf white tea from Drum Mountain gives you the opportunity to taste this precious tea in its most natural form with the least amount of processing. Plentiful young tea buds covered in soft downy hair and yellow tinted leaves give this white tea a unique appearance.
To prepare, cover in water 185 degrees and steep for 2 to 3 minutes. This tea can be re-steeped very well, just let it steep a few moments longer with each pot.
