This wonderful tea garden was found following a series of minor misfortunes, missteps, and screaming matches on sourcing trip to the famous Alishan area a few years ago. We have been working closely with The Mayor since, and this spring we were happy to support them with a large purchase of their spring tea.
Since then, we have been working hard to roast this tea to perfection, in our minds at least. It is finally ready to be shared! Smooth, sweet and buttery with a touch of roast, this tea is slightly less roasted than its Mayor’s Alishan sister tea giving it a thicker mouthfeel and sweeter aftertaste. For the price it is hard to beat this one for value, and we look forward to roasting some more next year!

Gong Fu Style: 3-5g per 100ml, ~95C(205f) water, 30, 45, 60 then add 5-10 seconds steeps in gaiwan. Lasts 4-5 steeps.
Western Style: 3g per 100ml, ~95C(205f) water for 2 minutes. Lasts 2-3 steeps
