Often found in herbal blends, and well known as an essential oil, Lavandula angustifolia makes an incredible tea all on its own.
Try 1/2 tsp of flowers per cup and pour water straight from the kettle over the lavender, and cover. This helps to fully release the oils and tannins from the flower, enhancing the taste and medicinal components of your cup of tea.
Adjust the amount of lavender you use and steep time to taste, but steeping too long may result in a more bitter flavour. It’s rather nice with a touch of honey.
