Drinking the last of this Mr. Earl May sample as a cold brew this afternoon, from my lovely but delicate More Tea tea bottle.

I only cold brewed for two hours but it was long enough to draw the flavour out without the green leaves getting bitter—I’m still finding the timing a bit of a dance when it comes to cold brewing greens. Blogs I’ve seen recommend up to six hours but that’s way too long for my tastes, or so it seems so far.

This one was very pretty to pour, as I think there is a touch of hibiscus in here, or something at least that has turned the steep blush pink. I was also surprised that the chamomile came out as strongly as it did with only a couple of hours of steeping.

The cold brew has given me a little more feeling for this blend. Interesting.

Thanks for the feedback! I haven’t tried this one as a cold brew purely because of what you mentioned about the Chamomile. It can become a little too bitter if infused for too long. This can sometimes be balanced with a sweetener of some sort whether it be honey or fruit.
