Dong Ding means “frozen summit” and is a mountain located in the central Nantou county of Taiwan. It may not have the highest altitude, but the mountain’s weather and soil produce one of Taiwan’s most beloved teas.
About this sample: Fresh from the winter harvest, these leaves were picked on Dong Ding mountain in October 2014. Oxidized to ~35%, the leaves were then roasted over charcoal fires to dry.
