道法自然 is a handmade tea picked and made from wild tea bushes around Horse Head Cliff 馬頭岩 by the Taoist Master who used to stay at the Horse Head Cliff Temple before the temple was taken over by venture capitalists. We had included this tea in our repetoire because of the significance of the tea and its experience. This is the closest to what you can get, as a historical representation of how Yancha used to be centuries ago, picked from wild bushes, and hand processed, then roasted and rested. It is a tea of mixed feelings, complexity, presenting an oscillation between states, and perceptibly an interesting set of micro dynamics which we invite you to explore.
We recommend a steep of 8, 9, 12, 15 seconds for the first four steeps, using a gaiwan of approx 120cc and water off the boil.
