晚雪黄栀香

This sensational winter Huangzhixiang was harvested during the solar term, “Great Snow” 大雪, between December 7 – 23, 2020. Temperatures drop significantly during this solar term and the earth is at its coldest. As the Chinese proverb goes, “A timely snow promises a good harvest”.
The tea garden is situated at 600 meters above sea level on Wudong Mountain, from the generational family tea farm of Mr. Liu. The tea trees are semi-wild, growing on their own with minimal human intervention for most of the year, except during the spring and winter harvests. Extremely small quantities of the winter harvest are available each year as the tea trees develop fewer and smaller leaves in the colder temperatures. Lower temperatures kill most of the insects underground, which then serves as nutrients for the tea plants. This, coupled with slower leaf development, allow the leaves to accumulate more nutrient and develop more flavour compounds.
The processing of this tea takes around 3 weeks. The final tea was sorted and ready on January 13, 2021.
The result is a stunning pale yellow-green infusion that yields elegant notes of lily on the nose, with hints of gardenia flowers and calla lily, accented by a luscious aftertaste of egg custard and honeysuckle. The absolute lack of bitterness and astringency reveals infusions of infinite delicacy.
