Preparation
Use 6g tea per 180ml water at 92°C. 1st steep 1:30. Add 1 minute of time for each additional steep, up to a total of 5.
Taste notes
Fragrant pear with cinnamon sugar undertones. Sweet and clean honeyed apricot notes open in later steeps. Balanced and fresh.
Origin notes
Shin-Fong submitted this lot of tea and won an excellence award in competition. We purchased the entire lot, which means barismo is the sole source outside of Taiwan. This farm is known for consistently producing quality teas, and the farm owners have a reputation for hard work and honesty. Their diliginet work shows in the beauty of their farm and the pristine care for their teas. While the lot is not certiifed organic, Shin-Fong grows the majority of its teas organically with the desire to get certified in the near future. This is a labor-intensive process when done the correct way, but the results show through in the cup.
