During the last century, before ripe pu-erh was created, pu-erh lovers in Hong Kong, enjoyed pu-erh tea that had been warehoused in humid basements along Victoria harbor, a storage that caused the tea to transform from a grassy and vegetal taste to an amber and mellow brew in a matter of a few years. Brewed to a burgundy hue, this tea is velvety smooth and mellow, yet not lacking a rich mouth-feel and sweet finish.
