Butterfly Pea is one of the most precious natural herbs from Thailand. It is known as Anchan. Thais have been using it for long time in both traditional medicine and kitchens. One of the properties of this plant is that when infused with hot water, it will change color from Blue/Navy to Violet/Purple/Pink once you add lime, lemon or any acid fruits. The taste and aroma are woody and earthy to the palate. Although it will depend on the time and the quantity of Anchan you use to brew the infusion.
